"Snow dad is better than no dad." - some amazing movie

Get ready to gasp.

June is busting out all over -- in the form of snow. What?!! Oh man.

Honestly. Whats going on? I thought that there were a bunch of little bugs flying outside my window when I woke up this morning. Makes more sense than snowflakes....right??? It's like a week and half away from the summer solstice. ha ha ha ha. I laugh.

It's weird growing up.

I use to want to be super-human.
Always being more than everyone else.
Trying to pretend that being hurt didn't effect me.
Turn the other cheek and act like I enjoyed it.
I guess the best way to put it is that I wanted to be God.

and then I can't pretend anymore.

And then I realize that being human,
created in God's image,
is the better than anything that I could ever hope to dream of on my own.

Tonights recipe is Petrie (you know, Land Before Time...) Peach Cobbler.


Petrie Peach Cobbler

Some (maybe 4 or 5 peaches worth) peach slices that no one will eat because they are "too brown"
1/2 C raspberries
1 T cornstarch
2 T + 1/2 cup sugar
a little cinnamon
2/3 C flour
2 1/2 T unsalted butter chilled
3/4 tsp baking powder
1/4 C milk

Preheat the over to 375. Mix together flour, 1/2 C sugar, baking powder. Cut in the butter. Cut until the consistency of bread crumbs. Add milk. With a spoon mix until dough forms. knead 5 or so times with hands. Roll out on a floured surface. Cut out the shape of a Pteranodon.
In a small casserole dish mix together peaches and raspberries. Whisk together remaining sugar, cornstarch and cinnamon. Mix in with peaches and raspberries. Place the Pteranodon on top. Add some more dough around the edges because everyone likes the dough.
Bake for about half an hour. The fruit should be bubbly and the dough, a little golden.

Serve warm with vanilla ice cream.
