Recipe for Disaster!

Boo.
Not like a scary boo. More like boo-hoo. yep, thats the one.
Anyway, I'm supposed to get my wisdom teeth out on Friday, but I just was diagnosed with strep throat today. Lame!
So life's a game.
Let's see, here's something I haven't done in a while...Recipe Time!
Chase away the winter blues with some stuffed summer squash!

Stuffed Summer Squash

4 Summer Squash
A few pieces of pancetta -- you know, it's like thin bacon...kinda...
Italian parsley
1 Onion
2 Stalks Celery
1 Red Pepper
Some good tunes to listen to
Olive oil
Parmesan Cheese
Salt and Pepper

Cut the Squash in half length-wise. Scoop out insides of the squash with a spoon, set innards aside. Chop the onion, celery, red pepper, pancetta and parsley. Heat up 1 table spoon of olive oil in med frying pan. Saute the veggies along with the innards of squash. Toss in a little salt and pepper. Once the onions are translucent, remove the veggies from the pan and toss in the pancetta and parsley for a very short time. Just so the pancetta is slightly cooked. Mix all of the cooked ingredients together and then scoop them into the hallowed out squash on a baking sheet. Cover with freshly grated Parmesan and bake at 350 degrees for about 15 min or until the cheese has all melted. Enjoy!
